the tradition of the Applesauce Walnut Cake

I didn't do the challenge last year but decided to give it another go this year----

my posts will be about food--cooking---entertaining and some story telling


applesauce walnut cake----robyn used to make it every Christmas----ever since she saw Olivia of the Walton's show making it on the very first Walton's----it was called The Homecoming and actually some of the characters changed afterwards---Patricia Neal played Olivia Walton on the very first one---


it was the depression and Olivia was worried whether she had enough money to get the sugar the traditional cake required----

robyn's

yellow or spice cake mix
1c. walnuts
2c. applesauce
bake as directed on box and ice with cream cheese icing


truth be told---it was never a big hit with our family---so either last year or the year before--robyn stopped making it---maybe it will make a return this year--

on one of our trips to the Walton's museum here in Virginia----robyn was thrilled to find Mr. Earl Hamner himself in the original house he grew up in---he was meeting there with some of his fan club and was nice enough to talk with robyn and let frank take this once in a lifetime photo--

    I saw that episode of the Waltons. I love both Patricia Neal and Michael Learned in the role as mother.
    How about reducing the liquid called for in the cake mix and maybe adding another egg. I think your family may like it even better. I usually do that if I'm using a packaged cake mix as the base for another recipe. I'm gluten free now and my husband is diabetic, so I can't try it to tell you what happens unfortunately!

    1. I didn't have one planned out out for recipes so I did no get that one in the challenge. I might put up some recipes on welcome to me, not sure.

  9. I've used a similar idea and made applesauce cookies with raisins instead of walnuts.

  10. Yeah Susan I love the cookies and especially with raisins but Robyn doesn't like the raisins!

  13. Good luck with the challenge Lynn. My girls grew up watching the Waltons. Even now well into adulthood they still come out with the 'goodnights', though they occasionally get mixed up with the names John-Boy, Jason, Mary Ellen, Erin, Ben, Jim-Bob, Elizabeth! ........Jim-Boy and John-Bob are the usual mistakes.
